DHOLL PURI

Dholl Puri is a ground yellow split peas seasoned with cumin and turmeric, griddled on a tawa (flat pan) and wrapped around cari gros pois (butter bean curry) with rougaille (spicy Creole tomato sauce), pickled vegetables, coriander satini (chutney) and chilli. Originating from Indian parathas (stuffed flatbreads). Dholl puri is unique in a way that it can be accompanied with anything and eaten at any time.

INGREDIENTS

  • For vegetable archard
  • 6 oz vegetable oil
  • 2 large onions
  • 10 garlic cloves
  • 4 long red or green chillies
  • 2 tbsp black mustard seeds
  • 8 oz cabbage
  • 8 oz carrots
  • 8 oz green beans
  • 8oz cauliflower
  • 2 tbsp white vinegar


  • For flatbread
  • ½ tbsp cumin seeds
  • 8 oz yellow split peas
  • 2 lb plain flour
  • ½ tsp turmeric
  • 1/4 cup warm water
  • vegetable oil
