GYRO

A gyro or gyros[a] (Greek: γύρος, gyros [ˈʝiros], literally ‘turn’) is a Greek dish made from meat cooked on a vertical rotisserie. Originally lamb, in Greece it is now most often pork, or chicken, while a mixture of beef and lamb is common in the US and other countries. It is usually served wrapped or stuffed in a flatbread such as pita, with tomato, onion, tzatziki sauce, and sometimes french fries.

Steak Gyro

YIELD 4 gyros PREP TIME 10 min TOTAL TIME 30 min

INGREDIENTS

  • For the filling
  • 1 lb of steak
  • 1/3 cup olive oil
  • 3 tsp minced garlic
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 lemon, juice and wedges


  • For tzatziki sauce
  • 1 cucumber + 1/2 tsp salt
  • 2 cups of Greek yogurt
  • 4 tsp minced garlic
  • 1/3 cup chopped dill
  • 1 1/2 tbsp of lemon juice


  • For serving
  • 4 pita breads
  • 1/2 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • romaine lettuce
