Double [duhb-uh l-s] is a common street food in Trinidad and Tobago. It is a snack made with a bara (flat fried bread) filled with curry channa (curried chickpeas), topped with mango, cucumber, coconut, tamarind and extra pepper sauce. It is the most popular fast food in the country.

Chickapea Doubles

INGREDIENTS

  • For the filling (channa)
  • 15 oz can chickpeas
  • 1/4 onion
  • 1 clove garlic
  • 1/2 tsp curry
  • 1/2 tsp tumeric
  • 1 tbsp cumin
  • 1/4 cup water
  • Salt and pepper to taste


  • For flatbread (bara)
  • 1/2 lb flour
  • 1/2 tsp tumeric
  • 1/2 tbsp baking powder
  • 1/2 tsp yeast
  • 1/8 tps brown sugar
  • 1/2 tps salt
  • 1 cup water
  • 1/2 tbsp oil
  • Oil for frying
