SHAWARMA

Shawarma is a Middle Eastern meat preparation. Originally made of lamb or mutton, today’s shawarma may also be chicken, turkey, beef, or veal, cut in thin slices and stacked in a cone-like shape on a vertical rotisserie. Thin slices are shaved off the cooked surface as it continuously rotates. Shawarma is one of the world’s most popular street foods.

Chicken Shawarma

INGREDIENTS

  • Marinade
  • 2 lb chicken thigh fillets
  • 1 minced garlic clove
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tbsp ground cardamon
  • 1 tsp ground cayenne pepper
  • 2 tsp smoked paprika
  • 2 tsp salt & black pepper
  • 2 tbsp lemon juice
  • 3 tbsp olive oil


  • Yogurt sauce
  • 1 cup Greek yoghurt
  • 1 clove garlic , crushed
  • 1 tsp cumin
  • Squeeze of lemon juice


  • For servings
  • 6 pita bread
  • Sliced lettuce
  • Tomato slices
