TACO

A taco [tah-koh; Spanish tah-kaw] is a traditional Mexican dish consisting of a corn or wheat tortilla folded or rolled around a filling. A taco can be made with a variety of fillings, including beef, pork, chicken, seafood, vegetables, and cheese, allowing great versatility and variety. Tacos are eaten without utensils, often garnished with salsa, chili pepper, avocado, guacamole, cilantro (coriander), tomatoes, onions, and lettuce.

  • 5 lb boneless pork shoulder
  • 3 tbsp achiote paste
  • 2 tbsp guajillo chili powder
  • 1 tbsp garlic powder
  • 1 tbsp dried oregano
  • 1 tbsp cumin
  • 1 tbsp salt
  • 1 tbsp pepper
  • 3/4 cup white vinegar
  • 1 cup pineapple juice
  • 1 pineapple, slice rounds

  • 12 small corn tortillas
  • 1 white onion
  • 1 cup fresh cilantro
  • 1 cup of salsa
  • 1 diced avocado
  • Lime wedges
